From 'Culinary Boot Camp' for food enthusiasts to 'The Cooking of Italy: From Tuscan to Sicily' for seasoned professionals, a CIA education emphasizes experiential learning. Students in our acclaimed degree programs learn the profession through more than 1,300 hands-on hours in the college's kitchens, bakeshops, and restaurants using top-of-the-line professional equipment. CIA classes span the culinary globe, exploring great cultures, cooking techniques, and cuisines, as well as restaurant operations, management, and communications.
The Culinary Authority: CIA Faculty
The CIA faculty of more than 130 instructors offers a depth of expertise in culinary arts, baking and pastry arts, nutrition, wine, and restaurant management. Our esteemed international education team has the broadest base of industry experience and the most American Culinary Federation-Certified Master Chefs (C.M.C.s) in culinary education. CIA instructors win gold medals in international competitions, hold Ph.D.s and M.B.A.s, lead the college's award-winning public restaurants, and have authored and contributed to acclaimed books for the classroom and the home cook alike, including The Professional Chef , Baking and Pastry: Mastering the Art and Craft, Exploring Wine, and Cooking at Home with the CIA.
